Creamy Dill Dip

From a Wedding Planner: Great Poolside Recipe

I am constantly thinking of new ways of entertaining.  I guess its the wedding planner in me.  I love to host dinner parties, make cocktails and scroll through websites for new recipes.  It’s a bonus when those recipes are delicious and easy to make!   I tried a recipe for a new dip this weekend when we had some friends over.  We were entertaining poolside and it was so HOT!  I’m sure we picked the hottest weekend of the summer.  I needed something quick and easy to make to go with some veggies I had on hand.  I am picky about dips and sides for by the pool because you don’t want anything too heavy or too salty.  The store bought dips, although delicious, are loaded with salt.  When it’s three digits outside the last thing you need is one of your guests getting even more dehydrated because of the food!

This creamy dill dip was so yummy and fresh.  It went so great with my veggies that I grilled some chicken and lamb to make gyros with this and used this in place of tzatziki  sauce!  So Yummy!  And Healthier than the store bought alternatives!

The Recipe:

1/2 C Sour Cream (I used the low fat kind)

1/4 C Mayo (I used the olive oil mayo)

Lemon Juice (I love citrus so I eyeballed it although the recipe called for 1 tsp)

Salt and Pepper to Taste

Dill (The recipe called for fresh dill but I had dry on hand and love dill so I added 1 TBSPs)

If you want to have something on hand for other recipes you could replace the dill with tarragon too.  Tarragon chicken is one of my favorite dishes and the sour cream is good for thickening the sauce! I’m always on the hunt for new recipes to try while entertaining and am trying to drag summer out a little longer so if you have any great recipes to share I’d love for you to send them to me!
